There’s no place like home, there’s no place like home, there’s no place like home.

First solid dinner night home from tour and I relish in my freedom to prepare a meal. This salad took 5 minutes to prepare and was extremely satisfying.

INGREDIENTS

cooked chicken breast, diced (marinated w a store-bought lemon-garlic marinade, cooked at 375 for 30 min last night)1 vine tomato (sliced into small wedges)
1/3 seedless cucumber (halved and sliced)
full plate of mixed greens
2 square inches lowfat mozza, grated
Omega Crunch maple flax seeds (locally produced!)
fresh ground black pepper
store-bought creamy dressing (not too much! Mix all together before eating so that a little goes a long way.)

PREP – dice cut and mix!

THE SCORE – High in protein, good balance of sweet and salt, fatty satisfaction from dressing and cheese, and bonus nutrients with Omega-rich maple flax seeds.
