If I’m going out on a big night (and this will be a big night – predrink w a buddy, socialite friend’s DJ birthday party downtown at 11PM and god knows what after) I like to eat an ultra healthy low-carb meal before I hit the beers and wine with abandon.


Here, I baked salmon for 13 min at 380 with salt, pepper and a drizzle of aged balsamic vinegar, and added it to a simple salad of baby spinach, sliced local cucumber, and organic grape tomatoes. Topped it off with a quick dressing, mixing apple cider vinegar, olive oil, a teaspoon minced garlic, a fork twist of honey, and dashes of salt and pepper. Boom!
